This refers to a drink which is served over ice, usually in a rocks (Old Fashioned) glass. It can be a single spirit all on its own, or it can be a standard mixed drink. Customers will often ask for a particular mixed drink or cocktail “on the rocks” if this isn’t a traditional way to serve it, for example a Manhattan is normally served “Up”, but if you’d prefer it on ice, you would order it “on the rocks”
