Typical Acidity Levels For Different Vinegars [1]

White Wine Vinegar 6 – 7%
Balsamic Vinegar 6 – 7%

Acidity of Lemons and Limes

"limes have a slightly higher acid content (on average) than lemons do - about 6% for limes, compared to 4.5% for lemons."[2]
